Clark-Claudon Vineyards Cabernet Sauvignon 2004
Using only 70% of our production our 2004 Estate bottling is a pure varietal expression of Cabernet Sauvignon. A compelling mixture of cassis, violet and cherry dominate the aromas while 24 months of aging in French oak imparts a fine-grained texture and lingering chocolate finish. The hallmark of this vintage is an elegant, silky texture that is imparted from mature vines and gentle handling in the cellar. At the table enjoy this wine with richly flavored beef dishes, lamb, earthy wild mushrooms and savory cheese. Wine Enthusiast This is a gorgeous Cabernet, but it’s pretty young, and while it’s delicious now due to the ripe fruit, it really needs time. Wrapped in fresh, tight tannins, it displays powerful red and black currant, blackberry, cherry, chocolate and vanilla oak flavors, and shows the elegant, important mouthfeel of a top Napa Cab. Give it until after 2008, if you can keep your hands off, and will come into its own after 2010. Score: 93. —Steve Heimoff, April 01, 2008. |
