Merlot
Merlot ripens two to three weeks earlier than Cabernet and will give a dark chocolate flavor if it has not fully ripened. Otherwise, its flavors run to mocha, coffee, black tea and boysenberry. Because Merlot in general has somewhat less tannin than Cabernet Sauvignon, it often feels softer on the palate.
