Wine Advocate The 2005 Cabernet Sauvignon (about 75% Cabernet Sauvignon, with a pretty hefty percentage of Cabernet Franc and the rest Petit Verdot) is deep ruby/purple, beautifully Bordeaux-like, but from a ripe year with its notes of charcoal, crème de cassis, cedar, and spice box. There is even a touch of lead pencil shavings in the taste of the wine. It has terrific freshness, medium to full body, and the ability to age well for at least 20-25+ years. Aromas of black cherry, minerals, violet and licorice, along with a wild hint of meat; rather Pauillac-like today. Suave, juicy and mineraly, with lovely delicacy of texture; on the palate, this reminded me of a Margaux. Not at all a blockbuster despite possessing very good breadth and 14.8% alcohol. A very elegantly styled wine that finishes with fine tannins and very good chocolaty length. This displays limited complexity today but the wine's lurking richness suggests it will merit a score at the high end of my range. Forman did a lot of crop reduction in 2005, in particular cutting off the shoulders of the large clusters. Score: 90-92 - Stephens Tanzers, May 2007.

The Vineyard Soil or “terroir” and the climate and exposure in which the soil exists are really the essence of a wine’s personality. Grape vines are tenacious plants and need to search a bit for their survival in order to thrive and achieve ultimate excellence of fruit quality. The vineyards are divided into three parcels, each one planted to the four Bordeaux varieties, Cabernet Sauvignon, Cabernet Franc, Merlot and Petit Verdot. Below the winery the “Clos” (enclosure) is deepest in the gravel/sand deposits. Directly above the winery the steeply sloped plot is composed of more dense and larger volcanic rock, so much so that extensive dynamite explosions were needed for rock shattering to facilitate planting. Further up the mountain lies the 3rd parcel, which is made up of the same pink gravel but is underlain with a gray volcanic ash. These locations each contribute their subtle differences to the wine, the whole of which is a synergy of complexity.
