Copain The well drained alluvial soils along with the cooler zone1 climate produces a rich, dark concentrated wine. Patience with this wine should reward you with an outstanding Syrah with a few years in the cellar or with a long decanting if you can not wait. As with all our Syrahs, fermentation included whole clusters, 50% for this wine, to add complexity to the aromatic and flavor profile. Wine Advocate The 2005 Syrah Thompson Vineyard (made famous by Ojai’s Adam Tolmach) is seriously endowed, with notes of licorice, ground pepper, incense, Chinese black tea, roasted meats, and copious quantities of blackberry and cassis fruit. Admirable stuffing, full-bodied power, and dazzling delineation make for an impressive Syrah that should drink well for at least 10-12 years. Score: 94 - Robert Parker, December, 2007. Wine Spectator Tightly wound, this is intense yet balanced, with rich, spicy, peppery, beefy dried currant and berry fruit that has a rustic and meaty edge, adding to its complexity and dimension. The Philosophy All of the great Domains that inspired us to make wine are fervent believers that great wine begins in the vineyard. As winemakers we are just custodians of that fruit allowing for the reflection of the site, varietal and vintage. In pursuit of this, Copain has sought out vineyards with expositions, soil compositions, climates, clones and rootstock selections capable of producing wines of distinction and singular character. The selected terroirs we source from are, in our belief, capable of expressing the truest varietal character interwoven with site characteristics and ultimately the vintage nuances. Further enhancing this expression is our belief in organic farming practices which allows the natural balance of flora and fauna inherent in each site to impact the developing vine, fruit and finally the wine.
