Calcareous Winery
This intriguing Cabernet Franc has highlights of garnet, violet and ruby red. Aromas invoke cherry, raspberry, red currant, licorice, and violets. The palate, a complex blend of rosemary, dark cherry, strawberry, dried herbs and chocolate. A medium-bodied variety that has hints of sweetness like brown sugar and molasses, with sensuous touches of oak, cedar and tobacco. Excellent partner for red meat no matter how well you like it done!
This is in equal parts a combination of the famed Calcareous Estate and Halter Ranch Cabernet Francs. Separated by less than five miles, as the proverbial crow flies, both share ultra low yielding ethos in their vineyard practices. Combine this with poor soils, cooling Westside fogs and a prolonged drought. The resulting flavor profiles are both fruitier and more herbal than most examples of this variety.
Cabernet franc vines bear thinner-skinned, earlier-ripening grapes with lower overall acidity, when compared to cabernet sauvignon. It then produces elegant wines that can arouse a range of descriptors for its color, aroma and flavors. It is essential not to over oak such a wine. Calcareous hands on boutique practices that let the soil and fruit speak and use fine French Oak barriques only to compliment not dominate the fruit is consequently perfectly suited.
